You can avoid the registration lineup and pay by mail or register on the Tuesday before the Fair or pay online by credit card. When you register in advance you need only to drop off your entries on Thursday evening or Friday morning.

The Mock Poultry Show is to replace our traditional Poultry and Waterfowl show, while Avian Flu is a threat. Entries in this show will be displayed in a tent in the agricultural area.
Entries must be hand made by the exhibitor. Any medium or combination of materials may be used; wood, metal, steel, wire, paper, fabric, yarn, recycled materials etc., to create a 3-dimensional bird.
Creations must not exceed 30 cm (12″) in width or depth, and be less than 45 cm (18″) in height. Entry tags must be attached to the birds.

Competition is open to NON-Professional Photographer members of the society.
You must save your photos in high resolution on a USB stick.
Photos must be taken during the 2026 Fair.
ABSOLUTELY no digital image enhancement allowed. All enhanced images will be disqualified.
Judging will be done by a committee approved by the OAAS Convention Manager.
Images will be shown, and awards will be presented at the upcoming OAAS Convention. Prize money will be distributed after the Convention in February. All images will become the property of the OAAS and may be used and posted without compensation or acknowledgement.

Preheat oven to 350 degrees and grease three 8-inch pans either round or heart shaped

INSTRUCTIONS:
1. Spray 3 – 8-inch pans and place parchment paper in bottom.
2. In a large bowl whisk together the flour, baking soda, salt, cinnamon, nutmeg and cloves and set aside
3. In another large bowl whisk together the melted butter, vegetable oil, sugars, applesauce and eggs. Making sure to whisk until fully combined.
4. In a small bowl mix together the shredded apples and buttermilk.
5. Add half of the dry ingredients to the butter mixture, mix until just combined, add the apple and buttermilk mixture, then finally add the remaining flour mixture. Mix until just combined, then fold in chopped apples.
6. Divide the batter evenly into the prepared pans and bake for 22 – 26 minutes, or until a toothpick inserted comes out clean. Let cool for 10 mins then invert onto a wire rack.
Lower Temperature in oven to 250 Degrees and make the following:
CANDIED PECANS:
1 cup sugar
1 Tsp cinnamon
1/4 Tsp salt
1 large egg white
1 tablespoon water
2 cups pecans
Gather all the ingredients and check oven is at 250 degrees
Mix sugar, cinnamon and salt together in a small bowl
Whisk egg white and water together in a large bowl until frothy
Toss pecans in the egg mixture to coat, and then slowly add the sugar mixture and toss
Spread onto a baking sheet
Place in oven and bake for 10 minutes, remove give them a toss and bake for another 10 – 15 minutes, remove and toss again and continue to do this for another 30 minutes. Total time in oven is about 50 minutes. Let cool and chop into small pieces. Set aside.
While pecans are baking prepare the frosting
BROWN BUTTER CREAM CHEESE FROSTING:
8 oz Cream Cheese – softened to room temp
1/2 cup Brown Butter and solidified back to room temp
1 Tsp Vanilla Bean Paste or Vanilla
1/2 Tsp Salt
3 1/2 – 4 Cups Icing Sugar
2 Tbs Milk or Cream
In a bowl cream together the cream cheese and the brown butter on medium speed for 2 to 3 mins or until light and fluffy. Then add vanilla and salt and half of the icing sugar. Mix on low then increase speed to medium high for 3 minutes. Then add remaining icing sugar and milk or cream. Beat for another 3- 4 minutes
2. Level off the cakes if needed
3. Cut a 10-inch round cardboard circle or heart shaped and cover with foil. Place the first layer of cake on the round and spread a layer of the frosting and top with some of the chopped pecans. Place 2nd cake on add a layer of frosting and chopped pecans. Place 3rd cake on top. Place in frig for 1 hour. Remove from fridge and frost the cake with the rest of the buttercream and then decorate to your hearts content keeping the theme in mind. Most of all have fun and be creative.

1 This show is for children under 14 accompanied by an adult
2 Registration will be accepted 12:00 noon to 1:00 pm – Dog owners have until 1:30 pm to register
3 All dogs must be leashed. All other pets must come in a pet carrier. Cats should not be removed from the carrier unless on a leashed harness.
4 All cats and dogs must have current vaccinations, especially a recent rabies vaccination.
5 The judge’s decision is final. Prizes will be awarded at the end of each class.

Judging will be done by a committee approved by the OAAS Convention Manager.
Images will be shown, and awards will be presented at the upcoming OAAS Convention. Prize money will be distributed after the Convention in February. All images will become the property of the OAAS and may be used and posted without compensation or acknowledgement.
