There are many opportunities to be an exhibitor at the Port Hope Fair.

Enter your best pie or the butter tart contest and maybe you’ll be the next provincial winner. Maybe your carrots are prize-winners or you have a drawing that you’d like to enter for judging. Simply choose the Section(s) and class(es) that you would like to enter, either Print an Entry form or Enter Online Here, pay the membership fee (over 12 years old only) and bring your entry form and exhibits to the Fair. You can avoid the registration lineup and pay by mail or register on the Tuesday before the Fair or pay online by credit card. When you register in advance you need only to drop off your entries on Thurs pm or Fri am. Exhibits must be picked up on Sunday between 4:00 and 5:00 p.m., except for entries chosen for the art gallery display.

Any medium such as pencil, crayon, pastel, paint, charcoal or marker is acceptable for each drawing and painting class.

2-Dimensional Art should be mounted on thick paper, card stock or cardboard with border no wider than 2 cm.

3-Dimensional sculptures, carvings and other objects should have a maximum height or depth of 30 cm.

The Mock Poultry Show is to replace our traditional Poultry and Waterfowl show, while Avian Flu is a threat. Entries in this show will be displayed in a tent in the agricultural area.

Entries must be hand made by the exhibitor. Any medium or combination of materials may be used; wood, metal, steel, wire, paper, fabric, yarn, recycled materials etc., to create a 3-dimensional bird.

Creations must not exceed 30 cm (12″) in width or depth, and be less than 45 cm (18″) in height. Entry tags must be attached to the birds.

OAAS PHOTOGRAPHY COMPETITION

Junior Division: Youth up to age 15 years (as of December 1st, 2025)

Competition is open to NON-Professional Photographer members of the society.

You must save your photos in high resolution on a USB stick.

Photos must be taken during the 2025 Fair.

ABSOLUTELY no digital image enhancement allowed. All enhanced images will be disqualified.

Judging will be done by a committee approved by the OAAS Convention Manager.

Images will be shown, and awards will be presented at the upcoming OAAS Convention. Prize money will be distributed after the Convention in February. All images will become the property of the OAAS and may be used and posted without compensation or acknowledgement.

General Rules

Competition shall be an open inter-club 4-H show with no entry fee.
Entries in livestock classes must be 4-H members’ projects in the current year.
Calves must be tied in a designated area and grouped according to 4-H Clubs with each participating club clearly marked.
All entries must be in tie-up area by 10am.
Exhibitors in the livestock classes will be identified by numbers which must be worn while in the show ring.
Classes will be judged on the group system of placing.
Committee in charge reserves the right to make adjustments to the program if needed.

PLEASE USE RECIPE PROVIDED

Preheat oven to 350 degrees

1 cup unsalted butter

2 cups sugar

1/2 cup vegetable oil

4 large eggs

1 tbsp vanilla

3 1/4 cups all purpose flour

2 1/2 tsp baking powder

1/2 tsp baking soda

1 tsp salt

1/2 cup sour cream

1 cup buttermilk

3/4 cup jimmes sprinkles

Frosting:

1 1/2 cups unsalted butter

5 cups powderd sugar

1 tbsp vanilla

2-3 tbsp milk

INSTRUCTIONS:

1. Spray 3 – 8 inch pans and place parchment paper in bottom.

2. Whisk together the flour, baking powder, baking soda and salt and set aside

3. Using a hand mixer or stand mixer cream together the butter, sugar until light and fluffy.

4. Add the oil and give it another mix scraping down sides

5. Mix in the eggs one at a time followed by vanilla, scrape down sides of bowl.

6. Mix in sour cream

7. Mix the flour and buttermilk into the batter alternating between the two, starting and ending with the dry ingredients.

8. Fold in sprinkles

9. Pour cake batter into pans and bake for 30-35 minutes – until toothpick comes out clean

10. Allow the cakes to cool in pans for 30 minutes and then place on a cooling rack until ready to frost.

Frosting:

1. Cream the butter and mix in one cup of the powdered sugar at a time, adding the vanilla and milk as it begins to thicken.

2. Level off the chilled cakes if needed

3. Cut a 10 inch round cardboard circle and cover with foil. Place the first layer of cake on the round and spread a thin layer of the frosting between each layer, then give the entire cake a thin layer of frosting. Place in frig for about 45 minutes. Remove from frig and frost the cake with the rest of the buttercream and then decorate to your hearts content keeping the theme in mind. Maybe it will look like the demolition derby or a carousel. Most of all have fun and be creative.

Canning Section Rules

All entries must be brought to the Town Park Recreation Centre between 6 p.m. and 9 p.m. on Thursday, September 11th or between 8 a.m. and 11 a.m. on Friday, September 12, 2025.
Entries must be picked up Sunday between 4:00 p.m. and 5:00 p.m.
For all classes, use snap lids only and product must be covered with liquid. Jars that are not fully sealed or have product exposed above the liquid will be eliminated.
Freezer jams are a no-cook jam and may use any kind of lid. They must be refrigerated or frozen until entry to the Fair.
No artificial colouring is to be used in any form.
Unless otherwise specified, any size canning jar may be used, for example, 125 ml, 250 ml, 500 ml.
Use fresh local produce as much as possible.
Points awarded as follows: 1st 3 points; 2nd 2 points; 3rd 1 point.

Tips for Canning and Preserves

Wash jars thoroughly. Select proper size for the category.
Follow cooking instructions carefully.
Follow sealing instructions for snap lids. Overfilling and under filling can cause seal failure.
The recommended headspace for jams and jellies is 1/4 inch, and 1/2 inch for tomatoes, vegetables, fruits and pickles. The product must be fully submerged.
Slide a rubber spatula between the jar and food to remove air bubbles. Re-adjust “headspace”.
Wipe jar rim, removing any food particles or stickiness.
Centre snap lid on jar and apply screw bands. Use timing in recipe. Then turn off heat and let jars sit for 5 minutes to avoid until jar contents have stopped bubbling. As the jars cool, the lids snap down creating an air-tight, vacuum seal Sealed lids curve downward in centre. Do not retighten screw bands. Store in a cool, dry place.

MUST USE RECIPE PROVIDED

Participants are required to enter one 500 ml jar using the following recipe.

Makes 5 x 500 ml jars.

Ingredients:

2 cups (500 ml) small cauliflower florets
1- 1/2 cups (375 ml) small white onions
3 celery stalks, sliced
3 small carrots, sliced
1 zucchini, sliced
4 large sweet peppers, cut into strips
4 cups (1000 ml) white vinegar
2 cups (500 ml) water
2 cups (500 ml) granulated sugar
1 tbsp (15 ml) pickling salt
3 bay leaves
6 peppercorns
3 cloves garlic, thinly sliced

Directions:

Combine vinegar, water, sugar and pickling salt in a large stainless steel saucepan; bring to a boil. Tie bay leaves, peppercorns and garlic in a large square of cheese cloth, creating a spice bag; add to liquid; boil 5 minutes.
Add prepared cauliflower, onions, celery, carrots and zucchini; return to a boil. Remove from the heat and add peppers. Discard spice bag.
Pack vegetables into hot jars to within 3/4 inch (2 cm) of top rim. Add hot liquid to cover vegetables with 1/2 inch headspace. Remove air bubbles and wipe jar rim. Centre hot sealing disc and screw band to fingertip tight. Return filled jars to rack in canner. Bring back to boil and process for 10 minutes.

Pet Show Rules

1 This show is for children under 14 accompanied by an adult
2 Entries will be accepted 12:00 noon to 1:00 pm – Dog owners have until 1:30 pm to register
3 All dogs must be leashed. All other pets must come in a pet carrier. Cats should not be removed from the carrier unless on a leashed harness.
4 All cats and dogs must have current vaccinations, especially a recent rabies vaccination.
5 The judge’s decision is final. Prizes will be awarded at the end of each class.

Exhibitors of honey must be registered beekeepers and the exhibits shown by them must be pure honey from floral sources in their apiaries.
The top prize winner of the Liquid Honey will be eligible to compete at the District level.
The winning exhibitor at the District level will be eligible to compete at the Provincial Competition.

This competition is open to beginners and 4-H members as well as Adults.

To acquire the compulsory bottle to exhibit the Maple Syrup, contact Squirrel Creek Farms at 705-932-2868 (Squirrel Creek Farms, 275 Brackenridge Dr., Millbrook, ON). The staff will answer any questions that you have and provide you with information to help you in preparing your entry.

Maple Syrup must have been produced in the current year by the person submitting the entry and must be in the required 250ml Kent style glass bottles to avoid being disqualified
Maple Syrup must have a brix reading between 66% and 68%.
An exhibit will consist of 1-250ml Kent style curved glass bottle. Syrup should be packed hot (180 degrees – 200 degrees).
There cannot be more than one entry per section per exhibitor.
Entries must have appropriate entry tag.

Judging

Maple Syrup sugar content must be between 66 Brix and 68 Brix. Outside of this will be disqualified. Density Maple syrup with a brix reading in the defined range between 66% and 68% will be awarded 30 points, next 25 points, then 20 points and 15 points
Maple Syrup entered in the wrong colour class will be disqualified

A special trophy in memory of Doug and Isabel Wright will be presented at the Annual Meeting to the winner for the best entry based upon flavour, density, colour and clarity no matter what class it is entered in and will be determined by the judge at the time.
This is a perpetual trophy and the winner must return it to the Port Hope and District Agricultural Society before the next fair.

OAAS MAPLE SYRUP COMPETITION

BEST of show winner of the “AMBER” coloured Maple Syrup will be eligible to compete at the District level by submitting one (1) – 250ml Curved Kent style glass bottle from the SAME BATCH that was entered at the Port Hope Fair Competition.

The winning exhibitor at the District level will be eligible to compete at the Provincial Competition by providing an additional two (2) – 250ml Curved Kent style glass bottles of the “Amber” coloured Maple Syrup from the SAME BATCH that was entered at the Port Hope Fair and District level Competitions. Entries at the Provincial Competition must be labelled on the BOTTOM of the containers only with a supplied entry number or identifier. No other labels will be permitted.

Entries must be hand made by the exhibitor. Any medium or combination of materials may be used; wood, metal, steel, wire, paper, fabric, yarn, recycled materials etc., to create a 3-dimensional bird.

Creations must not exceed 30 cm (12″) in width or depth, and be less than 45 cm (18″) in height. Entry tags must be attached to the birds.

Quilts to be measured on the perimeter. Total perimeter measurement to be a minimum of 324 inches. Note the quilt can be square, rectangular etc. All 4 sides must be measured to determine the perimeter measurement.
The quilting must be through all 3 layers (top, batting and back) and not be mounted on a frame. The quilt may have a sleeve attached to the back for the purpose of hanging the quilt.

Designs are not allowed accessories unless otherwise stated

Tips for Exhibitors

Name plants and flower specimens wherever possible
Potted plants must be in the exhibitor’s possession for at least two months. Plant must be groomed, single potted and clean.
Flowers must be fresh and grown by the exhibitor unless otherwise specified
Flowers and plants must be free of disease and insects
Containers are an integral part of any design
Specimens should stand erect, avoid wide-mouthed containers
The length of a gladiolus spike should be 20″ from bottom of bloom to bottom of stem
Cut flowers must be shown with foliage

Exhibitors’ Regulations

General

All Exhibitors, except Juniors 12 years and under, must be members of the Port Hope & District Agricultural Society. To obtain your membership card, send $10 for adults or $5 for 13 to 17 year olds with your entry form to the Secretary, PO Box 283, Port Hope, L1A 3W4. Your membership card entitles you to Fair entry.
All entry forms, unless otherwise indicated, may be sent to the Secretary, PO Box 283 Port Hope ON L1A 3W4. Entry forms may also be submitted to the Secretary at the Town Park Recreation Centre on Tuesday September 10 from 6 to 9 pm, Thursday September 12 from 6 to 9 pm, and Friday September 13 from 8 to 11 am.
Animals or articles entered for competition must be the bona fide property of the persons showing them, and with the exception of animals must have been grown, produced, manufactured or made during the twelve months prior to the Fair by the person or persons exhibiting them. Proof may be required.
No one may enter more than one article in any class except horses, cattle and art.
Exhibitors, except horse exhibitors, must be residents of the Province of Ontario.
Should there be only one exhibitor in a section, the judges may use their own discretion as to awarding a prize, but shall only make an award if they consider the exhibit worthy of a prize.
The decision of the judges shall be final except if any irregularity is claimed. Protests must be made to the Secretary on the day of the Fair.
Ten Dollars will be retained by the Treasurer from total prize money awarded and amounting to Fifteen Dollars or more for the next year’s membership.
The Treasurer will mail prize money following the Fair. Juniors may pick up their prize money from the Secretary during the Fair.
Upon the discovery of any fraud, deception or dishonest practice in preparation or ownership, or in any misrepresentation concerning any article exhibited which may affect, or have been intended to affect the decision of the Judges, the Directors shall have the power to withhold payment of any prize awarded and may prohibit any such party or parties from exhibiting in any class for one or more years.
Buildings are closed to the public while judging is in progress.

Exhibits at the Town Park Recreation Centre & The Fall Fair Centre

Exhibits may be brought to the appropriate building Thursday evening from 6 to 9 pm. Art, Photography and Quilt exhibits must be received by 9 pm on Thursday evening. All other entries must be taken to the appropriate building before 11 am on Friday, and given to the Director in charge of the correct section.
The exhibit halls in the Town Park Recreation Centre will be closed at 4:15 pm on Sunday. No exhibited article shall be removed from any Exhibit Hall before 4:00 pm. Exhibits must be picked up between 4:30 and 5:30 pm on Sunday.
No person, other than Judges, will be allowed to touch, taste or handle anything an exhibit.
The Directors will use every precaution to ensure the safety of articles on exhibition, but will not be responsible for the value of any article that may be damaged, lost or stolen.

Livestock

Exhibitors of cattle must produce Herd Book Pedigree to the Directors if required.
No livestock will be allowed to run at large on the show grounds during the Fair.
Any person using a whip to excess, or in any way interfering with any other exhibitors, shall forfeit all prize money.

Free admission tickets will be issued to exhibitors as follows: Horses and Cattle one to two animals, one pass; each additional two animals, one pass.
